The Kurouchi series from Takenami is the dream of every young or experienced chef: high-performance carbon steel, rustic and traditional looks and an insanely good price!
Kurouchi will have a rough , dark, oxidized coating which is created when the blade is forged. The blades are relatively slim , which makes these knives incredibly precise. The kitchen knife is finished with a two-part walnut handle and a Pakka ferrule.
Shirogami 2 Carbon steel (white # 2 ) is one of my favorite steels: it can be super easy to sharpen, becomes exceptionally sharp, cuts like silk and is still robust for its hardness . The hard core of the blade is embedded between two layers of softer carbon steel. This provides extra protection. The blade is not rustproof and needs some extra care.
