Due to the current high demand, the grinding service can unfortunately only be offered to existing customers. I ask for your understanding.

As a cook , collector and lover of high-quality Japanese kitchen knives , I always faced a big problem: There was no suitable way to have my blades sharpened professionally. Often, the local sharpening services lacked experience in dealing with Japanese knives.

For this reason, I first made sharpening blades my hobby and later my side job . Because the most expensive knife is unfortunately useless if it doesn't cut properly.

For all those who have the same problem I once had, I offer a professional grinding service.


How do I sharpen your knife?
I will first assess your knife and then sharpen it manually with the appropriate water stones depending on its condition and requirements. No machine grinders or other mechanical grinding devices are used. Each knife is sharpened by hand with the greatest care to achieve the best possible cutting quality.

Why by hand?
Japanese knives in particular require special attention due to the high quality of the material. Each steel requires the right whetstone to achieve the best possible result. Belt grinders and pull-through machines pose a risk to the blade due to the high heat generated , as this can permanently damage the material. In addition, the amount of material removed when sharpening by hand is much less and gentler, which means that the lifespan and functionality of your blade is maintained.


Which stones do I use?
I I use synthetic Japanese water stones with different grain sizes to achieve the optimal sharpening result for each knife. I rely on high-quality brands such as Naniwa , Shapton , King and Suehiro , which are characterized by their excellent quality and precision. These stones enable me to sharpen the blade gently and effectively.

How does it all work?
Since I run the sharpening service as a registered sideline , an appointment is essential. The knives can be dropped off at my place in Munich, Aubing (S4, Leienfelstraße) . Alternatively, I also offer the option of sending the knives directly to me. Please contact me in advance to clarify all the details.

Blades over 300mm after consultation.

Single-bevel ground blades:

For repairs please contact us in advance. It is best to provide a picture.

I do not sharpen serrated knives, weapon-like blades, fantasy swords or the like.
