Bunka: chef's knife/all-purpose knife, more information about the most common knife shapes can be found here: Knife shapes

Blue Paper Steel: There are 3 common types of Aogami: Blue #1, Blue #2 and Aogami Super or Super Blue.

Numbers #1 and #2 are the most common, with #2 being the most popular due to its good mix of sharpness and durability.

Super also contains vanadium and molybdenum. This makes the knife harder than the other two, which significantly increases the edge retention and achievable sharpness.

The steel core is made of Aogami #2 and is protected by stainless steel outer layers.

Attention! The steel core of this knife is made of carbon steel which can rust. You can find general care instructions and special tips for carbon knives by clicking on the links.
