Sujihiki: Slicer/ham knife , more information about the most common knife shapes can be found here: knife shapes .

Shungo Ogata is one of the younger knife makers in Echizen. He began his apprenticeship with the well-known master Shiro Kamo at the age of 26 and completed it after 6 years. He now has his own workshop where he makes his own knives.

Although Ogata-san is a fully trained blacksmith, he still has his blanks made by other Japanese blacksmiths. He uses this method so that he can concentrate fully on the equally important finishing of the knife. He focuses on delivering the knife in such a way that it is immediately ready for use without compromise.

In addition, Ogata-san grinds for other master blacksmiths from Echizen, such as Takeshi Saji and Yu Kurosaki.

Hand-forged knives can also show slight signs of processing. This is not a machine-made product.
