Yoshimi Kato is now the third generation to run the family business "Kato-knife-mfg". Yoshimi-san is known for still using traditional forging methods from days gone by. Forging using these methods requires a high level of self-discipline and is hard physical work, but these characteristics are clearly evident in every knife.
For Yoshimi-san, the highest appreciation for his craft is when his knives are used for cooking throughout his life.
