Hado : Hado is definitely one of the top knife makers in Japan at the moment.
The Sumi series by master blacksmith Yoshikazu Tanaka from " Hitachi Metals Yasuki Specialty Steel (YSS)" Shirogami #2 is hand forged and consists of a 3 layer San Mai construction. The knife was ground by Tadataka Maruyama, a professional sharpener from Sakai.
The handle is made from a single piece of oak, has been varnished and singed at the lower end with a flame. This gives the knife a very high-quality feel in the hand and goes wonderfully with the very clean Kurochi finish on the blade.
