Kajibei : Kajibei knives are hand-forged by master Kunio Ishikawa and his son in Sanjo.
Master Ishikawa only uses traditional Japanese steel such as Aogami and Shirogami. The knives are made using a wood-fired kiln and then polished by hand.
The handle has a D-shape and is made of magnolia and a plastic ferrule.
Due to the D-shape of the handle, the knife is designed for right-handed use.
