If you have any questions about this knife, please include "Model 1" in your message.

This Honyaki was forged from Shirogami 3 by master blacksmith Yoshikazu Ikeda and hardened in oil. The blade was then mirror polished and fitted with an ebony handle. The ferrule is made of white buffalo horn. The knife was specially made with an additional height of approx. 0.5 cm.

The blade has a protective varnish which should definitely be removed. Also, as is usual with a Honyaki, the blade is not "perfect" but shows traces of handwork!

  • HRC: 63
  • Steel: Shirogami #3 (blue paper steel, not stainless) oil hardened (Abura)
  • Blade length according to manufacturer: approx. 240 mm
  • Measured blade length: approx. 232 mm
  • Heel height: approx. 58 mm
  • Thick blade back over heel: approx. 3.3 mm
  • Weight: approx. 243 g
  • Form: Gyuto
  • Blade type: Double-edged 50/50
  • Finish: Mirror polished
  • Handle material: Ebony with white buffalo horn ferrule
  • Blacksmith: Yoshikazu Ikeda
  • Origin: Sakai, Japan

The knife is made of reactive carbon steel and requires special care. Since the knife is not rustproof, it should be dried carefully after each use. After some time, a dark patina will form which offers the knife additional protection.

I ask the care tips in my FAQ section. Here you will also find the general knife 1x1 .
