Collection: Shibata Koutetsu

The Koutetsu was created when Takayuki Shibata wanted to create the perfect knife. Normal Gyuto or chef's knives were often far too curved for him, so that the difference in height between the heel and the tip meant that there was less contact between the blade and the cutting material. The Nakiri with its flat cutting edge was too flat for him due to the friction.

The Koutetsu was created through experimentation: a very thinly ground blade that is mostly straight and curves slightly upwards towards the delicate tip. For Takayuki-san and many others, it is the "perfect chef's knife."

The knives are sharpened by Takayuki-san personally.
